Hawaiian Coconut Carrot Salad

INGREDIENTS

  • 1 1/2 - cups sour cream
  • 1/2 - cup Coco Lopez® Cream of Coconut
  • 4 - teaspoons lemon juice
  • 1/2 - teaspoon salt
  • 1 1/2 - cups drained crushed pineapple
  • 1 1/2 - cups raisins
  • 1 - cup flaked coconut
  • 1 - quart 2 cups (edible portion) shredded carrots

PREPARATIONS

In a large bowl, combine sour cream, cream of coconut, lemon juice and salt. Stir in pineapple, raisins and coconut. Fold in shredded carrots. Cover; chill. Refrigerate unused servings.
