Polynesian Shrimp

INGREDIENTS

  • 1/4 - cup chopped onions
  • 1 1/2 - teaspoons vegetable oil
  • 2 - cups prepared hollandaise sauce mix
  • 1/3 - cup Coco Lopez® Cream of Coconut
  • 1/3 - cup drained, sliced water chestnuts
  • 1/4 - coarsely chopped red pepper
  • 1/4 - cup coarsely chopped yellow pepper
  • 1 - tablespoon soy sauce
  • 1 - tablespoon lime juice
  • 12 - ounces cooked small shrimp
  • 1/4 - cup snow peas, cut in half as desired chow mein or rice noodles as desired hot cooked rice

PREPARATIONS

In saucepan or steam-jacketed kettle, saute onions in oil. Add hollandaise sauce, cream of coconut, water chestnuts, red and yellow peppers, soy sauce and lime juice; simmer. Add shrimp and snow peas; heat thoroughly. Serve with chow mein or rice noodles or rice. Refrigerate unused servings.
