Coconut Citrus Orange Mousse

INGREDIENTS

  • 1 - envelope unflavored gelatin
  • 1/2 - cup water
  • 3 - eggs
  • 1 - (15-ounce) can Coco Lopez® Cream of Coconut
  • 1 - cup pineapple juice
  • 1/4 - cup frozen orange juice concentrate, thawed
  • 1 - tablespoon lemon juice
  • 1/2 - teaspoon grated orange rind, optional
  • 1 - (8-ounce) container frozen non-dairy whipped topping, thawed (3 ½ cups)

PREPARATIONS

In small saucepan, sprinkle gelatin over water; let stand 1 minute. Beat in eggs. Over low heat, cook and stir until slightly thickened. In large bowl, combine gelatin mixture and remaining ingredients except whipped topping. Chill 45 minutes or until partially set, stirring occasionally. Fold whipped topping into gelatin mixture. Chill 5 hours or until set. Refrigerate leftovers.
