Piña Colada Pancakes



  • 3 1/2 - cups pancake mix
  • 1 - cup milk
  • 3/4 - cup Coco Lopez® Cream of Coconut
  • 2/3 - cup whole eggs
  • 3/4 - cup flaked coconut (optional)


In bowl, combine pancake mix, milk, cream of coconut, eggs and coconut; mix until blended (batter will be lumpy). For each pancake pour 1/ cup batter onto hot greased grill. Cook until edges are dry; turn and cook until golden brown. Serve with Citrus Ambrosia or flavored syrups.
